Ingredients

    600 grams Ricotta Cheese, whole milk
    150 grams Honey
    3 large Egg, fresh, whole, raw
    15 grams Cornstarch
    .5 tsp Salt
    1 tsp Vanilla Extract (or extract of your choice)

Directions

Preheat the oven to 180° C (355° F).

In a bowl mix all ingredients with a whisk wire or just a fork, until completely incorporated.*

Brush a 20 cm (8 inch) baking pan with oil or butter and pour the Melópita batter in. ALTERNATIVE: If you'd like smaller servings, prepare a 12-count muffin tin.

Bake for 40 min or until golden. ALTERNATIVE: Check at 20 minutes if using a muffin pan.

Serve Melópita warm or at room temperature drizzled with honey and dusted with cinnamon.

*Mixing in a blender produced a much smoother finished product and after a few times making this, the blender version was preferred.

Notes:
-This recipe works equally well with part-skim ricotta, half ricotta and half cottage cheese.
-This recipe is "basic" in that you can vary the flavors by using different extracts and/or toppings.
