Ingredients

    16 oz 93% Lean Ground Beef
    1 large Egg, fresh, whole, raw
    1/2 slice Bread torn into tiny pieces
    1/2 cup Milk Reduced Fat Milk 2%
    0.5 tsp Salt
    0.5 tsp Black Pepper, freshly ground
    6 tbsp Parmesan Cheese, shredded
    1 tbsp Parsley, dried
    1 cup, finely diced Mushrooms, fresh
    3 cup Spaghetti/Marinara Sauce (tomato sauce)
    1/2 cup mozzarella cheese shredded
    1 cup fresh Spinach, shredded

Tips

Look for Marinara sauce, wiith no sugar listed as ingredient, will reduce carbs significantly


Directions

Mix egg, milk, bread, parmesan in large bowl, make a paste, Crumble ground beef into same bowl, add raw mushroom cut into small dice and raw spinach, mix well with fork (keeps the meatballs tender) Using small scoop, create approximately 30 mini meat balls. Heat olive oil in skillet, brown meatballs, pour sauce over top, bring to a simmer, cook 10 minutes to be sure meatballs are done, sprinkle mozzarella over, cover with lid, let sit 1 - 2 minutes

Serving Size: 6 servings divide meatballs by 6, include 1/2 C sauce
