Ingredients
-
1.5 cup Bob's Red Mill Almond Meal/Flour (1/4 cup is 28g)
.75 cup Coconut flour (by SCRAPPYMELLA)
2 gram(s) Wholesome Sweeteners Organic Zero (Erithrytol) (by KOTWBB)
1 tsp Salt, Sifto Table Salt (by FAREWELLBC)
1 tsp Baking Soda
.75 cup Butter, unsalted
1 tbsp Apple Cider Vinegar, Bragg's Organic
.5 cup, fluid (yields 2 cups whipped) Heavy Whipping Cream
4 oz Almond Breeze Almond Milk, Unsweetened Vanilla
Tips
Keep the dough cold! I pressed mine out and cut it with a 3" circle cutter and got 15 biscuits. I also brushed mine with a little egg wash to make sure they turned golden on the top.
Directions
Mix all dry ingredients:
1 1/2 c. almond flour
3/4 c. coconut flour
2 t. erithrytol (or sweetener of your choice--can be omitted)
1 t. salt
1 t. baking soda
Then, add cut in 3/4 c. butter, cold
Finally blend in 1 T. apple cider vinegar mixed with 1/2 c. whipping cream & 1/2 c. almond milk (to make a buttermilk-like mixture).
Divide into 12 portions and bake at 350 degrees (F) for about 25 minutes.
Serving Size: Makes 15 biscuits
