This is a great summer recipe to cure the winter blues!! I take this to parties all the time and it always gets rave reviews! This is a great summer recipe to cure the winter blues!! I take this to parties all the time and it always gets rave reviews!

Ingredients

    salad:
    4 avocados-chopped into bite size pieces
    1 1/2 c. chopped tomatoes
    1/2 c. diced red onion
    1 can black olives, sliced
    1-3 jalepenos (depending on heat preference), diced
    3 tbs. fresh cilantro
    1 cup feta cheese

    dressing:
    1/2 cup each of mayo (or light mayo), white vinegar and sugar (or splenda to cut more calories!)


Directions

Mix dressing and let blend in fridge for half an hour.

Mix dressing with the rest of the ingredients in a bowl and enjoy!!
