This is a revised version of an old family favorite. This is a revised version of an old family favorite.
Number of Servings: 4

Ingredients

    1 1/4 cup oatmeal
    1 1/4 cup skim milk
    1 cup whole wheat flour
    2 egg whites
    1 tbsp canola oil
    1 tsp baking powder

Directions

Mix oatmeal and milk. Let stand 5 minutes. Stir in eggs. Stir in remaining ingrediants. Cook on a medium hot griddle. Makes 4 servings of 2 pancakes.

    Very good...thicker than I like pancakes but very filling. Added blueberries. - 10/13/08

    Great breakfast for days you want to feel full, texture more an oatcake than pancake. Expect to need either syrup or honey to sweeten it afterwards. Having no whole wheat flour, I used white . Added ¼ cup of Wheat Germ. Added ½ cup of pumpkin puree, cinnamon, cloves and ginger. - 6/29/08
