Number of Servings: 10

Ingredients

    2 cups finely chopped fresh green beans
    1 chopped onion
    4 cloves garlic, minced
    1Tbs coconut oil
    4 cups vegetable broth
    28oz can crushed tomatoes
    2 cups couscous (I used 2 boxes was a little over 2 cups)
    1 teaspoon paprika
    1 teaspoon ground turmeric
    1 package chicken substitute (I used Quorn chik tenders)

Directions

In 12-inch nonstick skillet cook and stir green beans, onion and garlic in hot oil over medium-high heat about 5 minutes or until tender.
Carefully stir in broth, tomatoes, couscous, paprika and turmeric. Bring to boiling. Reduce heat. Simmer, covered, about 10 minutes or until couscous is tender and liquid is nearly absorbed.
Stir in chik substitute. Cook, covered, over medium-low heat for 2 to 3 minutes or until heated through. Serve immediately.

    Quorn is not vegan, just so you all know. But this is a very tasty dish... look for vegan chick subsititues. - 7/29/08

    have made it several times. prepared as posted - it was okay, not great. but since then i have taken out the meat substitute and added more veggies (peppers, zucchini, whatever is on hand). yum! plus there are tons of leftovers for lunches during the week. also, goes well with vegan cornbread. - 8/4/08

    I made this with Near East whole wheat roasted garlic and pecan cous cous and Morning Star crumbled sausage instead of chicken. Very delicious! - 7/21/08
