Ingredients

    1 can each of
    sweet peas
    shoepeg corn
    french cut green beans
    To taste:
    pimentos
    green onions

    Marinade:
    1/4 cup each of sugar, apple cider vinegar and olive oil

Directions

1. Open canned peas, shoepeg corn, french cut green beans and drain thoroughly in a colander.

After vegetables have drained thoroughly, place in large bowl with 1/4 cup of sugar, 1/4 cup of apple cider vinegar, and 1/4 cup of olive oil. Add pimentos (1/4 cup or two taste) and chopped green onion to taste.

Add more vinegar if much too sweet. But, the sweetness will mellow as it sits.

Cover and refrigerate for 30 minutes.

Makes about 8 servings.

    Incredible!
    I made this for dinner tonight and it was delicious! I am not a pimento fan, so I just used finely chopped red bell pepper, and since I had no green onions, I just threw in a couple handfuls of diced yellow onion. My kids LOVED it! A definite hit! I am assuming that one serving is approx 1 cup? - 9/29/10
