Introduction

This Tuna and Tomato pasta bake is full of taste, protein and vitamins that will fill you up at either lunch or dinner without filling you with calories! So easy to make with ingredients right out of your cupboard! This Tuna and Tomato pasta bake is full of taste, protein and vitamins that will fill you up at either lunch or dinner without filling you with calories! Ingredients

    Brown Pasta (75g per person)
    Tuna Chunks - 1 can
    Canned chopped tomatoes
    1/2 cup of chopped sundried tomatoes
    1 small can of sweetcorn
    1 cup of chickpeas whole or chopped if you prefer
    Salt and Pepper to taste
    If you prefer a spicy kick, add some dried chilli or cajun spicing.

Directions

This will serve two people.

Boil a pan of water and add the brown pasta, reduce to a fast simmer and leave for 20 minutes until soft.
Drain the tuna, sweetcorn and chickpeas and add to a pan with the chopped tomatoes.
Chop the sundried tomatoes, this releases alot of flavour
Add to the pan
Slowly bring to a simmer, stirring occasionally.
Add any herbs or seasoning to taste
Once pasta is cooked, drain and put back into pan, add the tuna and tomato mixture and stir until evenly covered.
Serve with salad or low fat garlic bread.
Enjoy!!

For a special treat, sprinkle some low fat mozzarella on top and grill until melted, serve immediately!
