Ingredients

    1 tbsp Safflower Oil
    1 cup, chopped Onions, raw
    5 clove Garlic
    1 inch piece of Ginger Root
    1 tbsp Cumin ground
    1 tbsp Coriander ground
    2 tsp ground tumeric
    1 Bay Leaf
    1 cup, chopped Carrots, raw
    4 cups Organic Vegetable Stock
    1 cup, chopped or sliced Red Ripe Tomatoes
    1 cup Parsley
    Squeeze of lemon juice
    Hot sauce or harissa to taste

Tips

I use canned or fresh tomatoes, whatever is on hand.


Directions

In the food processor or with a hand blender, make a paste with the onion, spices, bay leaf, garlic and ginger (that's about a one-inch piece by the way.) Fry the paste in the oil for a few minutes. Add the stock and the RED lentils which you will have rinsed several times. Let simmer until the soup is fairly smooth. Add the tomatoes, parsley and a squeeze of lemon juice. Keeps well and freezes.
