Ingredients

    2 cup, diced Ham, extra lean, (5% fat) 2 cup Rice, white, long-grain, regular, raw, enriched 1 cup, chopped Onions, raw 1 large (2-1/4 per lb, approx 3- Sweet peppers (bell) 0.5 cup Peas, frozen .5 cup, chopped Carrots, raw

HAM FRIED RICE Prep Time 10 minutes Cook Time 40 minutes Total Time 50 mins Serves serves 4 INGREDIENTS • 1 cup long grain white rice • 2 cups water • 1/2 teaspoon salt • 2 cups of ham, diced • 1/2 sweet onion, diced • 1 cup frozen peas and carrots • 1 tablespoon Worcestershire • 1 tablespoon White Wine Vinegar • 1 teasp minced ginger • 1 teasp sriracha or other favorite hot sauce • 2 green onions, chopped INSTRUCTIONS 1. Place the rice and water in a small sauce pan and bring to a boil. Reduce to a simmer, cover, and continue cooking for 15 minutes or until the liquid has evaporated and the rice is mostly tender. Remove from the heat and let sit for 5 minutes. 2. When the rice is cool, begin cooking the diced ham over medium heat in a large, deep skillet. Cook ham until cooked through, but crisp. Remove with a slotted spoon to a paper towel lined plate. 3. Drain the grease to 1 tablespoon of grease behind. If no grease add 1 tablespoon of oil. 4. Add the onions to the pan and cook over medium heat until translucent, about 5 minutes. 5. Add the carrots and peas and ginger to the pan and continue cooking for 2 minutes. Remove from the pan and set aside. 6. Add 1 tablespoon of oil to the pan and heat until sizzling over high heat. 7. Add rice and stir to coat. Adding 1 tablespoon of oil. Continue cooking, stirring often, for 5 minutes. 8. Add the Worcestershire and the White Rice Vinegar to the rice and stir. 9. Return the vegetables and ham to the pan. Add the 2 teaspoons of sriracha to the rice and stir to coat while cooking over high heat. Sprinkle the green onion over the top and remove from the heat. 10. Taste and add more sauce as desired. Serve immediately.
