Ingredients

    2 serving Whole Earth Nature Sweet with stevia and monk fruit (by HOLWEGER)
    .25 tsp Baking Powder
    .5 tbsp Land o Lakes butter with Olive Oil & Sea Salt
    2 tbsp Heavy Whipping Cream
    .5 tsp Vanilla Extract
    .25 tsp cinnamon (scant)
    .5 cup, sliced Strawberries, fresh
    .75 serving Bob’s Red Mill Almond Flour - per 1/4 Cup

Tips

Any combo of flours works, but the original recipe called for 2 to 2.5 Tbsp worth of regular flour. Caution if you use flax meal. I've used half coconut flour, half flax meal, and it turned out very crumbly, but had good flavor. With a splash of milk along with the fresh strawberries, it was more a porridge than a cake though.


Directions

Mix all but the strawberries. Put into large oiled or sprayed mug. Cook on high in the microwave for a 90 seconds, adding 30 second increments until done.
