Number of Servings: 6

Ingredients

    1 lb ground turkey
1 c lowfat plain yogurt (1/2 for loaf and ½ for the top)
    1 jalapeno
    3 large cloves garlic
    1 inch fresh ginger, peeled
    1 small onion, minced
    1 green pepper, chopped
    1 egg white
    2 t cumin
    1 lime
1 bunch cilantro, chopped (or 1 t dried) (reserve half for garnish)
    1 t curry powder
    salt and pepper

Directions

Preheat the oven to 400.
Grate the garlic, ginger and jalapeno, using a microplane. (Remove seeds and ribs of pepper if you don’t want this to be as spicy.) Zest the lime. Mince the onion and green pepper. Slice the lime in half; squeeze juice into meat.
In a bowl, combine all the ingredients just until mixed. Place in a greased baking dish. Cover with remaining yogurt.
Bake until cooked through (30-40 minutes), then let rest five minutes.
Garnish with remaining cilantro.
Serve with rice.
