Ingredients

1/2 - 3/4 cup freshly ground peanut butter
9-12 cloves of fresh garlic
1 good sized finger of ginger, peeled and chopped
1 Tbsp soy sauce
1 Tbsp rice wine vinegar
1 Tbsp sesame oil
1 cup+ tap water
*1 tsp cayenne pepper
Directions
Makes about 8 1/4 cup servings
Allow peanut butter to come to room temperature while doing the following:
Chop garlic and ginger very fine. Combine in a large bowl with soy sauce, vinegar and sesame oil. Allow to sit for a couple of minutes.
Add peanut butter and begin to gently mix. Add water 1/4 cup at a time until completely mixed in to the peanut butter. Sauce will be pale and thick. If you like it spicy, you can add the cayenne now. Allow to stand while preparing the entrée. More water may need to be added after a few minutes, espcially with fresh natural peanut butter, as it seems to absorb the liquid and thicken up quickly. The longer this sits, the more flavorful it will be. I like mine really garlicy and really spicy. It always better the next day (if there's any left!)
Serve over rice and veggies (I recommend sautéed string beans) or pasta - about 1/4 cup of sauce per serving. Very tasty!
