Ingredients

1 head, medium (5-6" dia) Cauliflower, raw
4 oz Cream Cheese
.5 cup Sour Cream
5 serving Green Onion (fresh-1 stalk) (1/4 cup or to taste)
4 tbsp Parmesan Cheese, shredded (a little more does not hurt)
6 serving Pork: Bacon, broiled or pan fried (1 slice)
1 cup, shredded Cheddar Cheese
Directions
1. Preheat oven to 350F/180C. Spray a glass casserole dish with non-stick spray. Cut off stem and core cauliflower, and cut into small pieces. Cook in large pot of boiling salted water until cauliflower is tender, but not overly soft. Drain well and mash.
2. While cauliflower is cooking, cook the bacon and crumble, slice green onions, cube the cream cheese, measure sour cream, and measure Parmesan. Mix cream cheese, sour cream, green onion, Parmesan, and 3/4 of the crumbled bacon.
3. Spread evenly in a 1.5 Quart Glass Casserole Dish. Sprinkle with cheddar cheese and reserved bacon, and any extra onions. Bake 20-30 minutes, or until hot and bubbly.
Serve hot.
