Ingredients

1 cucumber, chopped
20 grape tomatoes, halved
2 cups cooked quinoa
1 15 oz can of chickpeas, drained
3 oz goat cheese, crumbled
2 cans tuna in oil, drained
4 tsp red wine vinegar
2 tbsp olive oil
2 tsp dijon mustard
.25 tsp kosher salt
.25 tsp pepper, black
2 tsp lemon juice
Tips
This is an easily customizable recipe. Swap out the quinoa for whatever grain you have on hand, swap out the chickpeas for any bean on hand, and the tuna for salmon, shrimp, chicken, or firm tofu.
Directions
Whisk together vinegar, oil, mustard, lemon juice, salt, and pepper to make dressing.
Combine cucumber, tomatoes, quinoa, chickpeas, and tuna in a medium bowl. Pour dressing over.
Divide into four containers, and top each serving with goat cheese.
