Tips
Instant Pots and yogurt strainers are available on Amazon. The strainers are not expensive and more convenient than using cheesecloth.
Directions
Put the metal bowl into the instant pot and pour the gallon of milk into it. Put the lid on and press the "Yogurt" button until you see "Boil" on the display. Turn the pressure button on the lid to "Vent". When the boil cycle is done, take the lid off and check the temperature. If it is not @ 190 degrees, press "Saute" and stir occasionally until it reaches the temperature. Then place the pot of milk into a sink full of water and ice cubes and stir until the temperature goes down to 110 degrees. Take the pot out of the water. Put yogurt into a small bowl and add about 1 cup of warm milk and whisk. Pour contents of bowl back into the pot and mix well. Dry off bowl completely before putting it back into the Instant Pot. (If you have a second bowl for the instant pot you can transfer the milk and yogurt mixture to a clean pot. When you heat the milk on saute, it can burn or brown on the bottom of the pot.) Put the lid back on and press the yogurt button until you see the number 10. If you like yogurt that's more tart tasting, press the + button until it reaches 11. After 10 or 11 hours, it will turn off and you can put it into a strainer and strain it for about 12 hours.
