Introduction

Number of Servings: 4

Ingredients

    4 4-oz fillets of Cod (or your favorite fish)
    1 tbsp Extra Virgin Olive Oil
    .25 tsp Pepper, black
    1 serving Lemon, fresh squeezed, juice of one whole lemon
    4 stalks green onion
    2 tsp Parsley, dried
    1 tsp Dill weed, dried
    4-8 Fennel fronds optional

Directions

Preheat oven to 450*f. Lightly coat baking pan with olive oil. Place fish in pan. Brush lightly with rest of olive oil.

Squeeze the lemon so the juice is over the fish.

Combine pepper, dill and parsley in small bowl. Sprinkle over fish, using more or less depending on taste.

Trim the top of the green onions. Lay one stalk on each fillet. If using fennel fronds, lay them on top of fillets.

Roast in oven for 10-15 minutes. Fish should flake easily. Discard green onions and fennel.

Serving Size: makes 4 4-oz servings
