My favorite spring time treat, made with skim milk. I made enough for 5 servings by using the following measurements, but the ingredients above were calculated for one serving. Ingredients

    10 ounces of red potatoes cut up small
    1 cup of fresh peas
    2 tablespoons of butter
    2 tablespoons of flour
    2 cups of skim milk

Directions

Put the cut up potatoes in water to cover and boil until almost tender. Add the peas and cook until both are tender. Drain

In another pan melt 2 tablespoons of butter. Add two tablespoons of flour and mix well. Let it cook just a bit to get rid of the floury taste. Add 2 cups of skim milk slowly, stirring continually. When it is all dissolved and slightly thickened, pour over the drained potaotes and peas. Salt and pepper to tasts. Make five servings. The calorie amount is for one serving

    Very Good
    I tried this but cut the sauce in half and boiled the
    potatoes in chicken broth. It was great!! Satisfying
    and pretty low in cals. Thanks!
