Introduction
This is a quick, easy, and very tasty salad that is actually filling. You can play with the quantities of fruit or use substitutions, whatever is on hand will probably taste good as long as the fruit is firm. We used Girard's Light Champagne Dressing (2 tablespoons = 60 calories) but many others would be good too. You can also hold the chicken to make an easy vegetarian meal. Ingredients

1 package fresh spinach
1 large apple
2 small pears
Strawberries, cut into halves or quarters, approximately 2 cups worth
1/4 cup walnuts
1 chicken breast, no skin
Directions
Cook the chicken breast per instructions on the package. Shred it or cut it into chunks. This is hardest part I promise!
Cut up the rest of the fruit into quarter inch pieces, and dump into a big salad bowl with the spinach lettuce and the chicken. Sprinkle the ground walnuts in for texture and taste. Toss, using the method of your choice. Divide into bowls, add dressing if you like, serve, and enjoy.
