    4 cup Cauliflower, Frozen, Kroger
    16 oz Chicken -Boneless, skinless chicken thigh (by JUSTKLH)
    0.5 cup Sauce - Green Chile Enchilada Sauce - Las Palmas (by LCWP2000)
    4 oz Cheddar Cheese
    3 serving Kroger Deli Thin PepperJack cheese slices 1 slice (21g)
    60 gram(s) Daisy - Sour Cream
    4 oz Cheese--Philadelphia Cream Cheese 1/3 less fat


Drain the cauliflower very well after steaming, and chop into bite sized pieces if necessary before continuing with recipe.


Steam cauliflower in microwave for 10-12 minutes, Add cream cheese and microwave for 30 seconds. Add the rest of ingredients except for sliced cheese, mix to combine. Season to taste (I recommend a taco or fajita blend, salt, and pepper). Put mixture in a casserole dish, top with sliced cheese. Bake at 375 for 20 minutes.
