Ingredients

    Dough:
    1 pkg yeast
    1 tsp sugar
    1 1/4 cup water
    3 cups flour

    Sauce: (makes enough for 2 pizzas--only used 1/2 this amount in calorie calculations)
    1 can tomato paste
    1 small can tomato sauce
    1/2 tsp basil
    1 tsp oregano
    1/2 cup water

    Toppings:
    3 cups chopped tomatoes
    1 tin flat anchovies, drained
    1 cup chopped jalapenos
    3 cups finely chopped fresh spinach
    2 cups shredded mozzarella
    1 cup sliced red onion

Directions

Pour 1 1/4 cup warm water in bowl, add 1 tsp sugar and stir. Add one pkg yeast and stir--let sit 5-10 minutes. Add 3 cups flour (gradually) and knead dough. Place in bowl (sprayed with oil), cover and let rise until doubled (45 minutes or so). Spray a cookie sheet with oil and roll dough onto sheet, gently pressing into pan until it reaches edges. Let dough sit 5 minutes. Bake crust 10 minutes at 400 degrees Farenheit, then let cool a few minutes. (Dough recipe can easily be doubled).

For sauce: Mix one can tomato paste, one can tomato sauce, 1/2 cup water, 1/2 tsp basil and 1 tsp oregano. Spread 1/2 over baked crust. (Sauce recipe makes enough for 2 pizzas).

Add toppings and bake an additional 15-20 minutes. Makes 8 servings.
