Ingredients

    1 pound medium shrimp, peeled and deveined
    2 limes, zested and juiced
    2 cloves garlic, grated or minced
    2 ears fresh corn, grilled and kernels removed from cobs
    2 tablespoons extra virgin olive oil
    1/2 cup sour cream
    2 teaspoons jalapeno hot sauce (green hot sauce)
    1/2 cup chopped fresh cilantro
    6 fresh corn tortillas, fried (or 6 packaged tostada shells)
    3 medium radishes
    1 sliced jalapeno pepper
    salt and pepper to taste

Directions

Toss the shrimp with the lime zest and the juice of 1 lime, the grated garlic cloves, and 1 tablespoon of the oil. Grill or pan-fry the shrimp over medium-high heat, adding more oil if needed.

Grill the corn and shuck or use kernels from frozen corn and heat through.

Fry the tortillas if using fresh.

Mix the sour cream, 2 tablespoons of cilantro, the zest and juice of the other lime, the jalapeno hot sauce, and salt to taste.

Spread the sour cream mixture on the tostadas. Top with the corn, shrimp, sliced radishes, sliced jalapenos, and chopped cilantro. If desired, squeeze on additional lime juice.
