Introduction

A cold pasta for a hot day. A cold pasta for a hot day.
Number of Servings: 3

Ingredients

    1 package (250g) of PC Liguria Pesto Tortelloni
    1 package (140g) of PC Herbed Goats Cheese
    1/4 c of chopped red onion
    2 plum tomatoes, diced
    1 clove of garlic
    1 tbsp of olive oil
    salt, pepper, italian seasoning - to taste

Directions

1. Place a pot of water on stove to boil.
2. Mince the garlic & chop the onions.
3. Soften the garlic and onions in the olive oil.
4. Place softened garlic and onions into the fridge to cool.
5. Chop tomatoes and place into a large bowl.
6. Put pasta into the boiling water (1-2min to cook)
7. While pasta is boiling, cube the goats cheese
8. Cool pasta with cold water.
9. Mix all of the ingredients together.
10. Season to your taste.
