Ingredients

    8 large Egg, fresh, whole, raw
    7 serving Aldi's Fit & Active Shredded Sharp Cheddar Cheese - 1/4 cup (28g/1 oz)/serving
    .25 serving 1/2 cup skim milk
    1 cup, chopped or diced Broccoli, fresh
    1 cup Cauliflower, raw
    .5 cup, pieces or slices Mushrooms, fresh
    5 spear, medium (5-1/4" to 7" lo Asparagus, fresh
    salt
    pepper

Tips

found a recipe like this on pinterest but didn't have the same veggies so i just added whatever i had on hand. i didn't have enough eggs so i used what i had left of egg substitute and liquid egg whites. it turned out fine.


Directions

preheat oven to 375
spray 9x11 baking pan
microwave veggies to soften
add to baking pan
whisk eggs, milk and cheese
pour egg mixture over veggies
cook 35 minutes or till eggs fluffy
