Ingredients

    8 large Egg, fresh, whole, raw
    .25 cup Milk, 2%, with added nonfat milk solids, without added vit A
    1 cup Colby and Monterey Jack Cheese shredded
    .5 medium (2-1/2" dia) Onions, raw
    .5 medium (approx 2-3/4" long, 2- Peppers, sweet, red, fresh
    1 serving Shitake Mushrooms (4 mushrooms, 72 grams)
    3 serving Louis Rich Turkey Bacon (1 slice)
    10 serving Cherry Tomatoes, Fresh, quartered
    1 tbsp Butter, salted
    2 medium Mushrooms, fresh

Tips

If you prefer a little spicier substitute red pepper for the black pepper. You may use just button mushrooms instead of the blend, and green pepper instead of red.


Directions

Preheat oven to 365
Spray a cupcake tin with Pam Spray
Dice and Saute onion, red pepper and mushrooms in 1 TBS butter
Cook bacon, cool and crumble
Blend eggs, milk and shredded cheese
Divide the sauteed vegetables (not cherry tomatoes) and crumbled bacon equally between the cupcake wells
Pour egg, milk cheese mixture over the top,
Sprinkle with black pepper
Add quartered cherry tomatoes to the top and place in the preheated oven.
Bake at 360 for 35 minutes, check for doneness bake an additional 5 minutes if needed. Cool for 5 minutes. Remove from pan and cool for 5 minutes on wire rack. Serve with fresh fruit for a quick breakfast.
