Ingredients

    1 large Onion, finely chopped
    2 clove Garlic, minced
    1/2 sweet red pepper, finely chopped
    1 rib celery, finely chopped
    1 medium Carrot, shredded
    1 tsp Chili powder
    1 tsp ground cumin
    1 (15 oz) can pinto beans, drained and rinsed
    1 (15 oz) can black beans, drained and rinsed
    1.5 cup quck oats
    2 Tbs Dijon Mustard
    2 tbsp Reduced Sodium Soy Sauce
    1 tbsp Ketchup
    1/4 tsp black pepper

Tips

Serve on bread thins with lettuce, tomato and salsa.


Directions

In large, non-stick skillet, sprayed with non-stick spray, cook onions and garlic in oil until tender. Stir in the carrot, red pepper, celery, chili powder and cumin, cook 2-3 minutes longer or until carrot and celery are tender. Remove from heat.
In large bowl, mash black beans and pinto beans. Stir in oats. Add mustard, ketchup, soy sauce pepper, and carrot mixture. Shape into 8 patties.
Heat grill to medium, spray grill rack, grill burgers covered, 4-5 minutes on each side. Serve
