Introduction

Number of Servings: 6

Ingredients

    3 pounds of Tilapia fillets
    6 egg whites
    3 cups of finely chopped walnuts
    3/4 tsp of salt
    freshly ground black pepper
    Olive oil spray
    Juice of 1 1/2 lemons
    3/4 cup of freshly chopped parsley for garnish

Directions

Rinse the fish in cold water and pat dry with a paper towel. Beat the egg whites in a bowl. Spread the finley chopped walnuts salt and pepper on a plate. Dip the fish in the egg whites and then dredge them in the walnut salt and pepper mixture, gently pressing the walnuts onto the fish to form the crust.

Heat a nonstick skillet and coat it with olive oil spray. Place the fish and cook for 3 to 4 minutes on each side, (as you turn the fish take care in turning), until the fish is cooke through. Squeeze lemon juice over the top and then sprinkle with the parsley and serve.
