Number of Servings: 8

Ingredients

    3 cup Quaker Oats Old-Fashioned Rolled Oats
    1.25 cup Sun Maid, California Chopped Dates
    2 tbsp Maple Syrup
    0.5 cup Nuts - Walnuts - Diamond Finely Diced
    1.5 cup Libby's 100% pure canned pumpkin

Tips

These make-ahead bars are great for grab-and-go snacks or even breakfast on the run.


Directions

Soak dates 10 to 15 minutes in hot water to soften. Drain dates but reserve water. Mix all ingredients thoroughly. If not sufficiently moist, add some of the water drained from the dates (by tablespoonsful) until sufficiently moist to press into baking pan ( I use a 7x11 glass baking dish) to form bars. Bake at 350 degrees for 12 to 15 minutes, allow to cool completely, cut into 8 bars. Can wrap and save in refrigerator for up to a week.
