Introduction

This is a South Beach version of my mother-in-law's stuffed squash. This is a South Beach version of my mother-in-law's stuffed squash.
Number of Servings: 8

Ingredients

    1/2 cup dry bulgur
    8 oz ground lamb meat
    8 green summer squash (sometimes called Mexican squash. They are shaped like yellow summer squash.)
    1 14.5 oz can S&W Ready Cut Diced Tomatoes
    1 cup V8 low sodium vegetable juice
    1 tsp 7 spice blend (or allspice)
    1 Tbsp spice blend

Directions

Soak Bulgur in water for 30 minutes. Rinse it well and squeeze out water.

Add bulgur and 1 tsp spice blend to 8 oz lamb meat and mix with hands.

Cut tops off the squash and Scoop out center of each squash. I use an Apple Corer with Plunger. Be sure not to go through the bottom of the squash.

Stuff each squash with 1/8th of the lamb mixture.

Place squash in pot and cover with the diced tomatoes, cup of V8 and 1 Tbs. spice blend.

Simmer for about 30 minutes in covered pot on low/medium heat till squash are tender.
