Ingredients

    1 1/2 pounds baby red skinned or Yukon gold potatoes
    1 tablespoon salt
    4 tablespoons unsalted butter
    1/2 cup half and half (or cream or milk of any type)

Tips

A few cloves of crushed garlic can be added to the pot with the potatoes if desired.


Directions

Wash potatoes well and do not peel. Cut in halves or quarters if large. Place in pot with just enough water to cover. Bring to a boil and then add salt. Reduce heat to keep a low boil and cook until potatoes are tender, about 15 minutes. Meanwhile, warm butter and cream (or milk) in a large bowl. You can use the microwave or put the bowl over the pot of boiling potatoes.

Drain potatoes. Add to the bowl with the melted butter and hot cream or milk. Use a hand masher or hand mixer to beat or whip to desired consistency. Serve immediately.

Serving Size: Makes 6 servings of about 3/4 cup each.
