Ingredients

    8 gram Organics whole peeled garlic (by EDRFAMILY5)
    1 tbsp Extra Virgin Olive Oil
    1 tbsp Salt
    3 large (3" to 4-1/4" dia.) Potato, raw
    0.5 cup Sour Cream
    2 oz Cream Cheese
    0.5 cup Butter, salted
    1 dash Pepper, black

Directions

Preheat oven to 350 degrees F.

Cut off the top third of the 2 whole garlic heads, discard, and place the remainder in a small baking dish. Drizzle with olive oil. Bake 45 minutes, until garlic is soft and brown.

Peel and cube potatoes. Bring a pot of water to a boil and stir in sea salt. Add potatoes. Cook 30 minutes, until potatoes are tender. Drain.

Transfer potatoes to a large bowl and add sour cream, cream cheese, butter, and pepper to bowl. Cover with a lid or aluminum foil and let stand for 5 minutes to soften butter and cream cheese.

Squeeze roasted garlic from the cloves into the potato mixture and mash until smooth, creamy, and thoroughly combined.
