Number of Servings: 10

Ingredients

    3 cup, cubes Sweet potato
    .5 stick Butter, salted
    .5 cup Granulated Sugar
    .5 cup Milk, canned, evaporated
    2 serving 1 Egg- large, fresh
    1 tsp Vanilla Extract

    Topping
    .75 cup, unpacked Brown Sugar
    .75 cup Flour - Gold medal all purpose flour
    5 tbsp Butter, salted

Tips

You can add some chopped pecans to the topping if you wish


Directions

Peel and slice Sweet Potatoes, cover with water and lightly salt and boil for about 20 minutes til tender. Place .5 stick butter in mixing bowl and after draining the potatoes, put them on top to melt the butter. Add the remaining ingredients and beat with electric mixer til smooth. Pour into a greased baking dish and spread evenly.

Topping...
Mix the brown sugar flour and butter by cutting in like making a pie dough. Sprinkle over sweet potato mixture and then bake at 350 degrees for 30-35 minutes until browned.
