Introduction

This Recipe is on the back of Trader Joe's Brand dried beans. But really could be used with any mixed beans. This Recipe is on the back of Trader Joe's Brand dried beans. But really could be used with any mixed beans.
Number of Servings: 8

Ingredients

    1 Bag (1lb) of 17 Bean & Barley Soup Mix (Trader Joe's or other grocery brand)
    6 cups of Vegetable Broth
    1 cup of chopped onion
    1 cup of chopped celery
    1 cup of chopped carrot
    1 cup of chopped bell pepper
    1 tsp. of fresh or dried basil
    1 clove of garlic
    2 Tbsp. olive oil
    1 bay leaf
    1/2 tsp. Italian seasoning
    1 Can of stewed Tomatoes
    salt & Pepper to taste

Directions

Soak beans overnight in about 6-8 cups of water. Then add soaked, rinsed, and drained beans to 6 cups of the vegetable broth. Then the rest of the ingredients. Simmer covered for about 1.5- to 2 hours or cook real slow all day. Check liquid levels throughout the cooking process and add when necessary. Salt and Pepper to taste. Makes 8 Large servings.

    I always cook a small beef roast with the beans and shred the beef when cooked before serving. It is a favorite in our home on cold winter nights. - 2/18/11
