Introduction

Ingredients

    1 pound Flounder or 4-4 ounce fillets of any white fish
    2 cup fresh spinach, chopped
    1 medium, red, green, or yellow bell pepper, sliced
    1-15 ounce jar of Four Cheese Alfredo Pasta Sauce (1 3/4 cups)
    1 medium onion, sliced thinly
    3 cups No Yolk Extra Broad Noodles (1 cup dry = 2 cups cooked)
    1 tbsp olive oil
    3 quarts water
    1 tsp kosher salt

Tips

After cooking the fish for the first 5-8 minutes there may be water in the pan. Drain the water before adding the Alfredo sauce and vegetables.


Directions

1. Preheat oven to 350 degrees.
2. Spray an oven safe pan with fat free cooking spray and position the fillets side by side. Once oven is heated, place fillets in oven for 5-8 minutes.
3. In a wok or a large pan, sauté the onions and peppers until the onions become translucent. Set aside in a bowl. While sautéing the vegetables begin boiling 3 quarts of water with 1 tsp of Kosher salt.
4. In the same pan, sauté the spinach until wilted. Add the jar of pasta sauce. Heat and mix thoroughly.
5. Remove fish from oven. Pour the spinach pasta sauce mixture over the fillets. Add the onions and peppers to the top.
6. Place the fish and sauce back in the oven for another 5-10 minutes.
7. Once the water is boiling, put in your No Yolk noodles and cook per package instructions (10-12 minutes). Strain noodles when done.
8. Serve a fillet and a healthy portion of sauce and vegetables over 1½ cup of cooked noodles.
9. Makes 4 servings.

    We really enjoy flounder but can't use the sauce. I use a creole and romano cheese as I bake it. - 1/24/19
