Introduction

Easy to make--just open the cans, mix together, and chill! Great for picnics. I use southwest flavored tomatoes, but other flavors or your own spices would be great as well. You can also add black olives, crushed tortilla chips, chopped peppers, cheese, etc as your calorie limit allows. My husband likes to add salt and spicy Mrs. Dash to his. Ingredients

    *Brown Rice, long grain, 2 cups cooked
    Beans, black, 2 cup (canned)
    Yellow Sweet Corn, Canned, 1 can (12 oz)
    Canned diced Tomatoes, 1 can southwest flavor
    Cilantro, raw, 2 tbsp chipped
    Chili powder, 1 tsp
    Onions, raw, .5 cup, chopped

Directions

Just mix it all together and chill for a couple of hours. Serve cold.
