Ingredients

    2 tbsp Chosen Foods Avocado Oil
    3 clove Garlic
    .5 cup, chopped Onions, raw
    1 large (7-1/4" to 8-1/2" long) Carrots, raw
    .25 cup Tomato Paste
    .25 cup Tomato Sauce
    1.25 cup Lentils
    5 medium (2-1/4" to 3-1/4" dia.) Potato, raw
    .25 tsp Thyme, ground
    .5 tsp Oregano, ground
    5 cup (8 fl oz) Water, tap

Directions

Heat oil in large pot, add onion and cook for 1 minute. Add galric and carrots, cook for 2-3 minutes stirring frequently to avoid burning.
Add in tomato paste, tomato sauce and lentils, cook for 1 minute.
Add chopped potatoes (bite sized). Pour in water, add spices.
Cover and bring to a boil, reduce heat to medium simmer until lentils are cooked and potatoes are tender (25 to 35 minutes).
Taste soup..spice to taste with salt and pepper or spice blends.
If too thick add water then reheat to serve.
Can use chicken stock or bullion if preferred for flavor.

Serving Size: makes 6 generous 1 cup servings.
