Ingredients

1 cup fat free chicken broth
1/3 cup less sodium soy sauce
1/3 cup extra crunchy peanut butter
3 tbsp honey
6 clove garlic, minced
1/2 medium (2-1/2") onions, very thinly sliced
2 large red bell peppers, sliced and bite size pieces
6 tsp minced ginger root
1 tsp crushed red pepper flakes
1 pound boneless pork chops, cubed raw (or cook, remove and then shred)
Tips
This recipe can be adapted with other veggies...like mushrooms or shredded carrots. It would also be good with chicken or beef (just make sure you remake the recipe to show correct nutritional values)
Directions
Place the chicken broth, soy sauce, peanut butter, honey, garlic, ginger, crushed red pepper flakes, red bell peppers, and pork chops into a slow cooker, stir together, and set the cooker on medium. Cook for ~4 hours or until the pork is tender. If you didn't cube the pork, remove the chops from the sauce and shred the pork, return to the sauce, let cook until hot, and serve.
