Egg substitute, liquid (Egg Beaters), 1 cup
Mushrooms, fresh, 1 cup, pieces or slices
Spinach, fresh, .5 cup
Garlic, 1 clove
*Laughing Cow Light Creamy Swiss Original Cheese (Serving = 1 wedge)
Directions
Pulverize garlic with until it's a paste. Heat skillet to medium. Spray Non-stick cooking spray on surface. Add garlic until it begins to brown. Add mushrooms, cook mushrooms and garlic for the next 3 minutes until the mushrooms have wilted.
Add egg substitute slowly a little at a time to the surface. Add spinach after you have formed a circular shape with the egg substitute. Cook for another two minutes. Flip omelet. Add the Laughing Cow wedge to one side of the omelet. Fold the omelet over and cook for another two minutes.
You may need to spray the surface in between steps to keep ingredients from sticking. The spray should also be fat-free to add little to no calories.
This turns out to be a huge omelet, very filling and 270 calories. It is suitable to eat for dinner!
