Ingredients

    4.0 cup, sliced Zucchini
    6.0 cup Canned Tomatoes
    16.0 oz Ground beef, extra lean (15% fat) pan broiled
    4.0 tbsp Kirkland Organic Extra Virgin Olive Oil
    7.0 serving Garlic, cooked (1 clove / serving)

Directions

Heat oil over medium heat in a large skillet. Meanwhile blend tomatoes to desired consistency and set aside. Add sliced garlic. When garlic just starts to bubble but not change color add pureed tomatoes. Add salt, pepper, oregano, and basil to taste. I add a tablespoon of pure maple syrup to cut the acidity. Stir to prevent burning occasionally. Cover with splatter screen and let reduce, usually 20-30 minutes. Brown beef in separate pan and set aside. Near the end of cooking time add beef to sauce. Add a tablespoon of oil to a pan and cook zucchini over medium heat for about 3 minutes. Toss frequently. When heated through drain and set aside. Serve sauce over "noodles." Serving Size: 1 cup
