Ingredients

4 oz cellophane noodles
1 cup cauliflower, chopped finely
1/4 onion, minced
2 cloves garlic, diced
1/2 tbsp ginger, grated
6 oz raw, medium shrimp - peeled and de-veined
1 1/2 cups Napa cabbage, shredded
1/2 cup bean sprouts
3 tbsp water
1/2 tbsp curry powder
pinch cinnamon
1/2 tbsp tamari
Directions
Soak noodles in boiling water for 10 minutes. Drain and set aside.
Heat 1/4 cup of water in a deep skillet or wok.
Add cauliflower and cover the pan, steam 2 minutes.
Add onion, garlic and ginger, cook 2-3 minutes longer.
Stir in shrimp and cabbage. Saute until the shrimp are almost cooked through.
Add reserved noodles, bean sprouts, water, curry powder, cinnamon and tamari.
Toss well and continue cooking until shrimp are pink, and everything is coated in curry mixture.
Immediately remove to plates and serve.
