Introduction

Ingredients

3 medium (7" to 7-7/8" long) Banana, fresh or frozen
3 tbsp Pure Vegetable Oil
2 Organic Egg
1 tsp Pure Vanilla Extract
5 cup, packed Brown Sugar
1.5 cup Organic Old Fashioned Oats
1 cup Organic All-Purpose White Flour
.5tsp Baking Powder
1 tsp Baking Soda
.5 tsp Salt - Table - 1 tsp.
3 oz Organic Raw Walnut Halves for top before baking (1/2 cup or to taste) .
Directions
Mix wet ingredients with brown sugar in a bowl well. (I like to freeze bananas and thaw them out before making muffins as they get nice a sweet.)
Mix dry ingredients together. Add dry to wet and mix well.
Place in Muffin tins with liner. Put chopped nuts on top and bake 20-25 min at 350 degrees until softly done to touch but light brown on top. Use toothpick to test doneness if it comes out clean.
