    1 cup, chopped Onions, raw
    2 medium whole (2-3/5" dia) Tomatoes, red, ripe, raw, year round average
    3 cup Yellow Sweet Corn, Canned
    4 pepper Jalapeno Peppers
    0.5 cup Whole Wheat Flour
    4 serving Egg white, large
    4 tbsp Coconut Oil - Carrignton Farms (by EDBUITRA)
    **** make sure coconut oil is liquid kind to begin with .
    2 cup Milk, 2%, with added nonfat milk solids, without added vit A
    4 tsp Cajun Seasoning (by EEJIT16)
    4 tsp Pepper, red or cayenne

Directions
Brown onions in water
Brown and drain sausage
set aside
add drained corn to big bowl,
add tomatoes "optional"
add shredded cheese "your choice"
cut fine jalapeno peppers add
add cayenne and Cajun seasoning "may add more if like hotter"
add browned onions and sausage

spray glass pan with cooking spray
Measures 15" L x 10" W x 2" H
add ingredients press down

mix is separate bowl
corn meal, flour, oil, eggs milk mix well
do not over mix

pour over jalapeno mix in pan
add to over bake 350
45 minutes or until toothpick comes clean

enjoy..

top with home make salsa.

    This was just fantastic, being diabetic it was low in carbs, plus I love hot and it had jalapeņos. I will be making this again and again. - 6/9/19

    make sure the canned corn does not have added sugar in it. If you cant find canned corn with out sugar you can cut it off the cob. or even put in another veggie in place of it. mom was a diabetic and i learned how to read labels all the time.
