I love this Salad for BBQ or Potlucks. We'll also use it with a Chicken breast to replace dinner. Ingredients

1 tbsp Sesame Oil
1 tbsp Canola Oil
3 tbsp Kikkoman Low Sodium Soy Sauce
1/2 cup Lime Juice
1 tbsp Orange Peel no pith
3 tsp Garlic crushed and diced or shredded on plane
2 Hot Chili Peppers
6 tsp packed Brown Sugar
1 cup, chopped Onions, raw
2 cup, grated Carrots, raw
2 cup Green Beans French style canned
2 cup Chinese Noodles, cellophane or long rice (mung beans)
2 tbsp Sesame Seeds toasted for extra flavour
Tips
In this recipe the carbs are primarily provided by the glass noodle. Glass noodles have a large varience, especially to a westerner who may not know the subtle distinctions they can be made with rice, taro, arrowroot, canna, etc.
For blood glucose levels read the ingredients and ensure you are buying mung bean. If buying from an asian grocery Sai Fun is what your looking for.
According to Adventures with Lake; "in Chinese you may also see them listed as 冬粉 (dōng fěn), 粉條 (fěn tiáo)". Kake also translates the english ingredients into Chinese for us. Thank you Kake.

Directions
Cook or thaw green beans. (if cooking - 2 minutes max; you want a crunchy texture).
Prepare pasta according to package directions. Usually soaking for 5-8 minutes.
I like a very thin gated carrot, as I think it looks more elegant.
Combine all ingredients, season to taste. cover and chill.
Just before serving dust with toasted sesame seeds.
