Ingredients

    1 cup Lentils
    2 cups water
    1 serving Bouillon-Herb Ox Beef
    16 oz Turkey, ground turkey breast -99% fat free
    2 cups shredded carrots
    1/2 cup, chopped Onions
    8 oz package mushrooms chopped
    1 cup Oats, Quaker
    1 tbsp Garlic, Crushed
    1.5 tbsp Extra Virgin Olive Oil
    0.25 cup Egg whites
    1 14 ox can Hunts Petite Diced Tomato
    1 tsp Mrs. Dash (R) Garlic & Herb Seasoning Blend

Directions

• Boil water with bouillon. Add lentils and simmer covered 25-30 minutes, until lentils are soft and most of water is evaporated.
• Saute onion, mushrooms, carrots and garlic.
• Drain and partially mash lentils.
• Scrape into mixing bowl and allow to cool slightly.
• Stir in oats and ground turkey
• Add egg whites, diced tomato and vegetables
• Mix well.
• Spoon into loaf pan that has been generously sprayed with Pam (non-stick cooking spray) or well-greased.
• Smooth top with back of spoon.
• Bake at 350 degrees for 1 hour and 15 minutes minutes until top of loaf is dry, firm and golden brown.
• Cool in pan on rack for about 10 minutes.
• Run a sharp knife around edges of pan then turn out loaf onto serving plate
