Ingredients

1 medium Delicata Squash (about 508 grams)
1 cup Cherry Tomatoes, quartered
3.5 cups Mann's Fresh Fusion Kale Beet Blend
110 grams Morningstar Farms Chorizo Crumbles
1/2 a Hass Avocado
1/4 cup Plain Greek Yogurt
2 tbsp Nutritional Yeast powder
2 tsp Frank's Red Hot Original Cayenne Pepper Sauce
Directions
Preheat oven to 375° F. Prepare a baking pan with nonstick cooking spray.
Trim the stems from the squash, and cut in half lengthwise. Remove the seeds and pierce the skin with a fork several times on each half.
Spray a large sauté pan with nonstick cooking spray and place over moderate heat. Add the tomatoes, mixed vegetables, and sauté until softened about 5 minutes. Add the chorizo and stir until heated through.
In a small bowl mash the avocado with a fork until smooth. Then add in yogurt, yeast powder, and hot sauce until well combined. Add to sauté pan and mix to coat vegetable chorizo filling thoroughly.
Fill each squash half equally with the mixture and bake for 20 to 25 minutes until squash is tender.
