Number of Servings: 4

Ingredients

    1 medium cantaloupe; peeled, seeded, and cut into large chunks (any melon may be used in place of cantaloupe)
    1 medium banana
    1/2 cup fresh orange juice
    4 oz. green apples, peeled and diced
    2 tsp. fresh lime juice
    2 tsp. fresh mint, minced

Directions

1. In blender or food processor, combine melon, banana, and orange juice; process until smooth. Keep refrigerated until ready to serve.

2. In a small bowl, combine and gently toss the diced apple with lime juice and mint. Refrigerate for up to an hour until ready to serve.

3. To serve - ladle soup into chilled bowls and add 1/4 of the apple/mint mixture in the center of each bowl.
