Introduction

Easy, vegan, microwavable, and cozy warm. Leftover quinoa for breakfast. One dish to wash, the one you eat from. (okay, maybe you need to chop that apple on a cutting board, but you'll have a leftover chopped apple for the next day's breakfast and a spinachy walnuty salad later would love those diced apples, future you will love that apple! Ingredients

    As desired: (what I do)

    Salt (two shakes)
    Cinnamon (five shakes)
    Nutmeg (three shakes)
    A packet of sweetener (that's just me!)

    1/3 Apples, diced, fresh with skin
    2 Tbs Raisins
    2 Tbs Pepitas, pumpkin seeds
    1/4 cup oatmeal, old fashioned, dry
    1/4 cup cooked Quinoa (leftover and cold)
    1/2 cup water

Directions

Sprinkle cinnamon and nutmeg in microwaveable bowl with a couple of shakes of salt and a packet of sweetener.

Mix.

Add apples, oatmeal, and raisins, stir.

Top with cold quinoa, and a cup of water

Microwave 2 minutes, stirring once.

Serving Size: 1 serving.
