You can easily add other vegetables like jalapeno peppers or corn or olives to this recipe - just remember the calorie count will change.


Over medium heat in a large frying pan, brown lean ground beef. Add diced onion, red pepper, mushroom pieces and taco seasoning (use as much or as little as you prefer). Stir, breaking up beef, until no longer pink. dice the tomatoes and add them to the pan. Stir well. Turn heat down and let simmer for 20 minutes.

Tear lettuce and distribute evenly on dinner plates. Top with taco mixture. Spread 1/3 of the cheese over each plate. Enjoy!
