Introduction

Ingredients

    2 tbsp Ground Flax
    2 tbsp Psyllium Husk Powder
    2 tsp Yeast, bakers
    2 cup Almond Meal/Flour
    1 cup Water (hot)
    1 tsp Granulated Sugar
    4 tbsp Vital wheat gluten
    1.5 tsp Truvia
    1/4 tsp Salt
    1 egg (optional)
    1 tsp olive oil (optional)

Directions

Combine yeast, sugar and hot water, followed by the flax and psyllium husk powder. Give it a brief stir and let sit for about 10 minutes. The yeast should create a foamy mixture. If it doesn't, you may need fresh yeast, or your water may have been too hot, or not hot enough. Water should not be boiling, but around 110 F.
Add vital wheat gluten, almond flour, stevia and salt and combine until it forms a dough. Combine and knead it for 5 to 10 minutes. The dough may be a bit sticky; that's okay.
For a single loaf form into a ball and place onto a loaf pan. Cover the loaf pan with a towel and place in a warm place for about 20 minutes. Set the over to 375 and bake for 30 minutes or so. Take loaf out and let cool.
For four rolls, split dough into four quarters. Roll into ovals and place in a muffin tin, or a baking dish (if using as a bun, especially for burgers). Cover dish with a towel let rise for 20 minutes in a warm place. Set oven to 375 F. Optionally beat egg and brush the tops of your buns. Bake for 25 minutes.
For two pizza crusts, form into a ball and let dough rise in a warm place in a bowl covered with a towel for 20 minutes. Set oven to 350 F and split dough into two pieces. With optional olive oil on your hands, roll the dough into a ball, and then gently press out into a pizza crust with your fingers until they are about 6 to 7 inches in diameter. Put in the oven for about 10 minutes. Take out, and top however you want!
