Introduction
This is a short version of a Portuguese-like way to prepare cod fish that I had growing up made by my mom. I kept out the potatoes and the boiled eggs. Ingredients

3 serving Fish: Cod, filet/frozen
1 bag 20 oz Great Value Pepper & Onion Blend
3 tsp Onion powder
3 tsp Garlic powder
1 tsp Morton Iodized Salt
10 Great Value Manzanilla Green Olives (Pimiento Stuffed )
3/4 cup extra virgin olive oil
1 tsp Oregano, ground
Directions
Heat the olive oil in a large skillet and add place the cod fish fillets to start. pour in the spices minus oregano and salt. Let it simmer for 5 minutes covered, then sprinkle with the oregano and the salt, and add the olives and the contents of hen the bag of the frozen bell pepper/onion mix. Drip some olive oil if you wish.
Cover and let it cook for 15 minutes, turn the fillets carefully as they will be flaky and breaking at this point. Cover them with the now cooked and flavor full pepper, onion and olives. Cover and let it cook for 10 more minutes just so the flavors get even better mixed.
The kitchen will smell wonderful and you serve it with pride with rice, mashed potatoes, or just plain... which I did... it is amazing!
Serving Size: Make 6 portions (half of a fillet) with cooked bell pepper, onions, and olives.
